Christmas Swiss Roll Recipe

By Kathryn Slade Festive Baking

So simple but so tasty, it’s just not Christmas without a festive chocolate swiss roll. Whether you decorate it with chocolate butter cream, or fill it with fresh whipped cream like we do, you are in for a treat.

You’ll find all the ingredients that you need in Newton Stores in the centre of the Bluestone village. The well stocked shop has all you need during your stay from baking ingredients, to the essentials like fresh milk and locally baked bread.

So if you are staying with us over the festive break give our chocolate swiss roll recipe a whirl and send us the results on social media!

3 large eggs
75g caster sugar
50g plain flour
25g cocoa powder, plus extra to dust
150ml fresh whipping cream

1. Preheat your oven to fan 180°C, conventional 200°C, gas mark 6.

2. Line a shallow baking tray with baking parchment.

3. In a large bowl, whisk the eggs and sugar for around 10 minutes until the mixture is pale and light. You should be able to leave a trail on the top when it is at the right consistency.

4. Using a large metal spoon gradually and gently fold the flour and cocoa powder into the mixture until it is evenly mixed. Be careful not to be too rough as you don’t want to lose the air you created with the whisk!

5. Gently pour the mixture into the tin and level the surface.

6. Bake for 10-12 minutes until it is well risen with only a slight bounce to the touch.

7. Whilst the swiss roll is baking cut a large piece of baking parchment and dust with cocoa powder or icing sugar if you prefer.

8. When the cake is baked, turn it out onto the baking parchment and remove the parchment that was use in the baking.

9. Trim the edges and make a small indent around an inch from the shorter edge of the rectangle. Then gently roll it up trying to keep it quite tightly together.

10. Leave it to cool while you whip up the cream using an electric whisk.

11. Straighten out the swiss roll, fill it with whipped cream and then redo your roll for the perfect treat!
