How To Bake Pineapple Upside Down Cake

Whilst it might not be a national holiday today is the day that we annually observe Pineapple Upside Down Cake Day! Yes that delicious spring time cake really does have a whole day dedicated to its deliciousness.

There is only one way to celebrate such a day and that is to bake one to enjoy! If you haven’t tried it then you are missing out, it is amazing warm and can be served with ice cream, custard or cream for the ultimate treat. Give it a go and celebrate this great cake today!

You will need:

  • 175g Butter
  • 175g Caster Sugar
  • 175g Self Raising Flour
  • 3 eggs
  • Either a fresh pineapple cut into rings or a tin of pineapple rings
  • Glace Cherries

How to mix it up:

  1. Heat the oven to 180C/160C fan/gas 4.
  2. Beat the butter and the sugar together until they are creamy.
  3. Whisk the eggs and then add to the butter and sugar mixture.
  4. Then sift in the self raising flour and fold in until it’s all combined.
  5. Drain the pineapple if it’s tinned and arrange the rings around your baking tin.
  6. You can add a cherry to the middle of each pineapple ring if you wish!
  7. Spoon the mixture on top of the pineapple and smooth it out.
  8. Bake for around 35 minutes or until the sponge bounces back when touched.
  9. Leave to stand for a few minutes before turning it onto a plate
  10. Serve warm with a scoop of ice cream or some thick cream!
