Soft Butterscotch Pudding Cookies

We like to be a bit different here at Bluestone, so although it’s Nation ‘Butterscotch PUDDING Day’ we thought we’d tone done the sickly sweetness just a tad, but keep it scrummy with some Butterscotch Pudding Cookies instead. It’s getting to that time of year when we can all prepare to let our waistlines expand an inch or two as we enjoy the heart warming comfort foods that get us through the winter months.

Luckily, it looks set to be a warm autumn, a good one for taking a break and enjoying the outdoors for a little longer – but still, there’s no reason not to enjoy a little sweet treat on a Friday is there? The guys at Millers Bakery helped us just a tad and we hope that this recipe creates some soft and chewy butterscotch pudding cookies loaded with butterscotch chips and topped with sea salt! We’re definitely going to give this one a go this evening!

Ingredients Serves: 16-18 Prep Time  - 1 hour 15 minutes - Cook time -12 minutes

200g butter, softened

200g brown sugar

75g sugar

1 teaspoon vanilla

1 egg

120g flour

100g box of butterscotch pudding mix (dry, not prepared)

1 teaspoon baking soda

1 bag butterscotch chips

Coarse sea salt


1. In a large bowl, cream together butter and sugars. Mix in vanilla and egg until smooth.

2. in a medium bowl whisk together flour, butterscotch pudding mix, and baking soda. Add dry mixture to wet ingredients and mix until combined. Stir in butterscotch chips. Cover and chill 1 hour.

3. Preheat oven to 350. Scoop about 2 tablespoons of dough and roll into balls. Place on lightly greased baking sheet at least 2 inches apart for spreading.

4. Bake 10-12 minutes. Immediately after removing from the oven, sprinkle cookies with coarse sea salt. Allow to cool completely on baking sheet. store in airtight container at room temperature.
